Lentil Soup
Ingredients
1 cup green or brown lentils, rinsed
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 can (14 oz) diced tomatoes
4 cups vegetable broth (check label for gluten-free)
1 tsp cumin
½ tsp paprika
½ tsp turmeric
½ tsp salt, or to taste
¼ tsp black pepper
1 tbsp olive oil
1 cup spinach or kale (optional)
1 tbsp lemon juice (for brightness)
Instructions
Sauté the Veggies
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery. Cook for 5 minutes, stirring occasionally.
Add garlic and cook for 1 more minute.
Add Spices & Lentils
Stir in cumin, paprika, turmeric, salt, and black pepper.
Add lentils, diced tomatoes, and vegetable broth.
Simmer the Soup
Bring to a boil, then reduce heat to low and let simmer 25-30 minutes, or until lentils are tender.
Final Touches
Stir in spinach/kale (if using) and cook for 2 more minutes.
Add lemon juice for a fresh flavor boost.

Serve warm with gluten-free bread or a side of rice.
