Lentil Soup

Ingredients

  • 1 cup green or brown lentils, rinsed

  • 1 onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 1 can (14 oz) diced tomatoes

  • 4 cups vegetable broth (check label for gluten-free)

  • 1 tsp cumin

  • ½ tsp paprika

  • ½ tsp turmeric

  • ½ tsp salt, or to taste

  • ¼ tsp black pepper

  • 1 tbsp olive oil

  • 1 cup spinach or kale (optional)

  • 1 tbsp lemon juice (for brightness)

Instructions

  1. Sauté the Veggies

    • Heat olive oil in a large pot over medium heat.

    • Add onion, carrots, and celery. Cook for 5 minutes, stirring occasionally.

    • Add garlic and cook for 1 more minute.

    Add Spices & Lentils

    • Stir in cumin, paprika, turmeric, salt, and black pepper.

    • Add lentils, diced tomatoes, and vegetable broth.

  2. Simmer the Soup

    • Bring to a boil, then reduce heat to low and let simmer 25-30 minutes, or until lentils are tender.

  3. Final Touches

    • Stir in spinach/kale (if using) and cook for 2 more minutes.

    • Add lemon juice for a fresh flavor boost.

  4. Serve & Enjoy!

    • Serve warm with gluten-free bread or a side of rice.
