Cheese Cake
Ingredients
Base:
2 Cups of pecan
3/4 c of white granulated sugar
1/4 c of butter
Filling
3 packets of cream cheese
3/4 c of white granulated sugar
1/4 cup of cocoa
3 eggs
Topping:
Put 1 cup of chocolate chips in a bowl
1/4 cup of whipping cream
Directions
Base:
Mix in Vitamix to be as fine as possible mix 2 Cups of pecan and 3/4 c of white granulated sugar.
Add 1/4 c of butter.
Spread into the pan and press down using a heavy glass to firm up the base.
Filling:
Beat 3 packets of cream cheese, 3/4 c of granulated sugar and 1/4 cup of cocoa together.
Once all mixed, add 3 eggs, one at a time, with a spatula. Do not beat this stage, just stir one at a time until fully mixed in, but avoid mixing in with air.
Bake in oven for 1 hour
Remove and cool to room temperature
Topping:
Put 1 cup of chocolate chips in a bowl
Heat 1/4 cup of whipping cream in a pot, do not curdle.
Once almost boiling, pour over chocolate chips.
Stir until smooth.
When cheesecake is cool and does not jiggle, drizzle ganache on top.
Cool in the fridge ideally overnight.
