Cheese Cake

Ingredients

 

Base:

  • 2 Cups of pecan

  • 3/4 c of white granulated sugar

  • 1/4 c of butter 


Filling

  • 3 packets of cream cheese 

  • 3/4 c of white granulated sugar

  • 1/4 cup of cocoa

  • 3 eggs


Topping:

  • Put 1 cup of chocolate chips in a bowl

  • 1/4 cup of whipping cream


Directions 


Base:

  1. Mix in Vitamix to be as fine as possible mix 2 Cups of pecan and 3/4 c of white granulated sugar. 

  2. Add 1/4 c of butter.

  3. Spread into the pan and press down using a heavy glass to firm up the base.


Filling:

  1. Beat 3 packets of cream cheese, 3/4 c of granulated sugar and 1/4 cup of cocoa together.

  2. Once all mixed, add 3 eggs, one at a time, with a spatula. Do not beat this stage, just stir one at a time until fully mixed in, but avoid mixing in with air.

  3. Bake in oven for 1 hour

  4. Remove and cool to room temperature


Topping:

  1. Put 1 cup of chocolate chips in a bowl

  2. Heat 1/4 cup of whipping cream in a pot, do not curdle. 

  3. Once almost boiling, pour over chocolate chips. 

  4. Stir until smooth.

When cheesecake is cool and does not jiggle, drizzle ganache on top.

Cool in the fridge ideally overnight.
