Quinoa Chick pea salad

Ingredients

  • 1 cup quinoa, rinsed

  • 1 ¾ cups water

  • 1 can (15 oz) chickpeas, drained & rinsed

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • ¼ cup red onion, finely chopped

  • ¼ cup fresh parsley, chopped

  • ¼ cup feta cheese (optional)

Dressing

  • 3 tbsp olive oil

  • 2 tbsp lemon juice

  • 1 tsp Dijon mustard

  • 1 tsp maple syrup or honey

  • ½ tsp garlic powder

  • Salt & pepper to taste

Instructions

  1. Cook the Quinoa:

    • In a pot, bring quinoa and water to a boil.

    • Reduce heat, cover, and simmer for 12-15 minutes or until fluffy.

    • Let cool.

  2. Make the Dressing:

    • Whisk together olive oil, lemon juice, Dijon mustard, maple syrup, garlic powder, salt, and pepper.

  3. Assemble the Salad:

    • In a large bowl, combine chickpeas, tomatoes, cucumber, red onion, and parsley.

    • Add cooked quinoa and toss.

  4. Dress & Serve:

    • Pour the dressing over the salad and mix well.

    • Top with feta (if using) and enjoy!
