Omlette

Ingredients

  • 2 large eggs

  • Sea salt and freshly ground black pepper, to taste

  • Butter or extra-virgin olive oil, for the pan

  • Desired fillings (see suggestions in the blog post)

  • Cream Cheese


Instructions


  1. Crack eggs into a medium bowl and whisk until yolks and whites are well combined. Season with salt.

  2. Heat an 8-inch nonstick skillet over medium heat. Add a small pat of butter or a drizzle of olive oil and swirl to coat the pan.

  3. Pour eggs into the skillet and reduce heat to medium-low. Let cook undisturbed until edges begin to set, about 10 seconds.

  4. Use a spatula to push the cooked egg toward the center, tilting the pan to let uncooked egg flow to the edges. Repeat until the uncooked egg thickens and fills in the omelet.

  5. Once the omelet is mostly set, add your desired fillings on one side.

  6. Fold the other side over the filling and cook until eggs are just set.

  7. Remove from heat, season with additional salt and pepper if needed, and serve immediately.
