Grilled Halloumi Salad

Ingredients

  • 8 oz halloumi cheese, sliced into ¼-inch slabs

  • 2 Tbsp olive oil, divided

  • 3 small cucumbers, sliced into coins

  • 2 cups cherry tomatoes, halved

  • 4 oz baby greens mix

  • 3 Tbsp fresh mint, chopped

  • 1 Tbsp freshly squeezed lemon juice

  • 1 tsp sea salt

  • ½ tsp ground black pepper


Directions

  1. Heat a grill pan over medium-high heat or preheat a grill to medium heat.

  2. Brush halloumi slices with 1 tablespoon of olive oil, coating both sides.

  3. Grill halloumi for 2-3 minutes per side until grill marks appear and the cheese starts to melt.

  4. In a large bowl, toss cucumbers, cherry tomatoes, baby greens, and mint together. Spread onto a large plate or platter.

  5. In a small bowl, whisk together remaining olive oil, lemon juice, sea salt, and black pepper. Drizzle over the salad.

  6. Add grilled halloumi on top and serve immediately.

Notes & Tips

drizzle of balsamic glaze for extra flavor.

Make-Ahead Tip: Prep veggies and dressing in advance, then grill halloumi just before serving.
