Grilled Halloumi Salad
Ingredients
8 oz halloumi cheese, sliced into ¼-inch slabs
2 Tbsp olive oil, divided
3 small cucumbers, sliced into coins
2 cups cherry tomatoes, halved
4 oz baby greens mix
3 Tbsp fresh mint, chopped
1 Tbsp freshly squeezed lemon juice
1 tsp sea salt
½ tsp ground black pepper
Directions
Heat a grill pan over medium-high heat or preheat a grill to medium heat.
Brush halloumi slices with 1 tablespoon of olive oil, coating both sides.
Grill halloumi for 2-3 minutes per side until grill marks appear and the cheese starts to melt.
In a large bowl, toss cucumbers, cherry tomatoes, baby greens, and mint together. Spread onto a large plate or platter.
In a small bowl, whisk together remaining olive oil, lemon juice, sea salt, and black pepper. Drizzle over the salad.
Add grilled halloumi on top and serve immediately.
Notes & Tips
drizzle of balsamic glaze for extra flavor.
Make-Ahead Tip: Prep veggies and dressing in advance, then grill halloumi just before serving.
