Brownies
Ingredients
2 cup blanched almond flour
2 cup granulated sugar
2/3 cup raw cacao powder
4 large eggs
6 Tbsp melted butter
2 tsp vanilla extract
1 tsp baking soda
1/2 tsp fine sea salt
2/3 cup mini chocolate chips
Directions
Preheat the oven to 350ºF. Line an 8-inch square pan with parchment paper. (Lightly spray the pan with oil first to help the parchment stick in place.)
In a large mixing bowl, combine almond flour, coconut sugar, cacao powder, eggs, melted coconut oil, vanilla extract, baking soda, and sea salt. Stir well until the batter is thick and smooth.
Reserve 2 Tbsp of chocolate chips for topping, then fold the remaining chips into the batter.
Transfer the batter to the prepared pan. Use a spatula (or wet hands) to press it evenly into the bottom.
Sprinkle the reserved chocolate chips on top.
Bake for 25 minutes, or until the edges look dry and the center is set (slight jiggle is fine for a gooier brownie).
Cool the brownies in the pan for 1–2 hours before slicing into 16 squares.
